I’m always on the lookout for great breakfast and snack time recipes. Anytime you have had a light lunch or feel like munching something with your tea, you can have these kinds of snacks. The snacks can be served at tea parties, kitty parties or just when neighbors come visiting. Sabudana is one such ingredient derived from palm tree fruits which can be used to make delicious snacks. It is used throughout India to make puddings and other recipes. Here I’ve given asabudana vada recipe. Sabudana, according to Hindu culture, is even allowed to be eaten during fasts (vrat). Just replace the normal salt with the special salt used during fasting and you have a delicious fast recipe. So go ahead and try this nutritional and energy filled sabudana vada.
All you need is:
Sabudana – 1/2 cup
Potatoes – 3 (large)
Green chili – 3-4 (chopped)
Green coriander – 4 tbsp
Salt to taste
Roasted peanuts – 1/4 cup (broken into small pieces)
Ginger – 1/2-inch piece (grated)
Sabudana Vada Recipe
Soak sabudana in 4 cups of water for 3-4 hours.
Boil potatoes.
Peel and grate potatoes.
Drain the excess water from sabudana, once they have soaked the water.
Mix sabudana, grated potatoes, green chili, green coriander, peanuts and salt in a vessel.
Apply a little oil on your palms and make small balls from the mixture.
Heat oil in a non-stick pan and deep fry the balls till golden brown from both sides.
Serve hot with some coriander chutney.
Tips
Do not over boil the potatoes, otherwise they will be too sticky.
Soak sabudana for at least 3-4 hours, otherwise it will not be soft from inside.
