Fish and chips, fish cutlets and fish rolls, sound so English, that many with taste-buds tuned to Indian flavors ignore them altogether. Here is a take on Fish Cutlets which look English but taste 100% Desi.
What all is needed:
Steamed Cat fish or White Indian Salmon fillet (200 grams per person)
Cornflour 1 tbsp per 100 grams
Spring Onions
Olives
Green Peppercorns
Chopped Garlic
Ginger, thin slices
Brown bread slices 1/4 / cutlets
Potatoes 1/4 of fish by weight
Clove powder
Coriander powder,
Fresh Coriander
Mint powder
1 Teaspoon cream/ malai / cutlet
Fried fish chunks 2 /cutlet
1/2 egg white per cutlet
Oil for frying
Fish Cutlet Recipe
Steam fish fillet, create a batter with cornflour and egg white. Mix steamed fish fillet with everything else except the batter. Create slices as shown in the picture. Dunk them in the batter made of cornflour and egg white. Shallow fry them till golden brown. Serve with tomato slices, tartar sauce or mint chutney as sides.
