South Indian Fried Rice
South Indian Fried Rice
There are always times when you need something quick for your meal and are not in a mood to spend a lot of time in the kitchen, sometimes even with left overs. A lot of times, I have white rice left over after a party or even a regular family meal. Fried rice is one amazing creation which can enthuse a  lot of flavors to the rice and making it look, feel and taste like a newly created rice dish. I tried adding a few more south Indian flavors to it to make south Indian fried rice. An addition of sambhar powder, chana dalurad dal along with other ingredients makes it taste really unique. It can be easily had only with plain curd or some raita and salad on the side and is a proper meal in itself. You could even try and add some scrambled eggs or shredded chicken to make it egg- or chicken-flavored south Indian fried rice. Here is a simple recipe to try in your own kitchen.
All you need is
Cooked rice – 2 cups
Oil – 2 tsp
Curry leaves – a sprig
Mustard seeds – 1/2 tsp
Chana dal – 1/2 tsp
Urad dal – 1/2 tsp
Onion – 1 (chopped)
Tomato – 2 (thinly sliced)
Green chili – 1 (chopped)
Sambhar masala – 2 tsp
Salt to taste
Turmeric powder – 1/2 tsp
