Lemon rice is a south Indian dish made with rice and is flavoured with lemons. The tanginess from the lemons and the crunch from the peanuts makes this dish a very balanced meal.  It is a very quick-to-make recipe and can be put together in no time. It is usually eaten for breakfast throughout the southern part of India, but you can enjoy it anytime of the day with some pickle or just on it’s own. It is also a good recipe to use the left over rice and it can be stored for up to 2 days. It makes a very good tiffin option and is also good to carry while travelling as it does not spoil very fast. To make it healthier you can also add vegetables like carrots, beans and peas, though it is traditionally made with only peanuts. So, here is the recipe.
All you need is
Cooked rice – 1 cup
Vegetable oil – 2 tsp
Mustard seeds – 1/2 tsp
Chana dal – 1/2 tsp
Urad dal -1/2 tsp
Dried red chili – 2-3
Peanuts – 2 tbsp
Curry leaves – 1 sprig
Green chili – 2 ( slit into half )
Onion – 1/2 cup ( chopped )
Salt to taste
Turmeric powder – 1/4 tsp
Lemon juice – 2 tbsp

Lemon Rice Recipe

Heat oil in a pan.
When the oil is hot, add mustard seeds.
When the seeds starts splattering, add chana dal, urad dal, peanuts and dried red chilies.
Fry till slightly browned.
Add onions, curry leaves and green chili.
Fry for a minute.
Add salt, turmeric powder and lemon juice.
Fry for 30 seconds.
Add in the cooked rice.
Simmer the heat and mix well.
Cook for 2 minutes on low heat.
Serve hot with some pickle.
